Mom and three kids Greetings from Pittsburgh, Pennsylvania! Things have been busy. I am still a working mom of three, working full time who is trying to make a difference. I do a lot of things and try to be present so that I can learn from them. I share them on this blog so that we can learn together. Making Dinner Fast, Nutritious and Economical

As a working mom, I struggle to provide my family with nutritious meals that my are easy to make, fast, and economical. I also want those meals to be nutritious and delicious. These are ambitious goals that I have achieved by relying on things learned during my childhood.
 
Growing up I wondered why my parents served us so much chicken! In the mind of a child chicken seemed predictable and boring. Now that I am a parent I understand. Chicken is predictable and boring, but it is also high in protein and relatively low in fat. It is also economical and readily available. So, it is an inexpensive way to provide your family with good quality protein.  (The organic or free range chicken will cost you a bit more, but many families can still fit it into their budget.) 
 
As a working mom, I have followed in my mother's working mom footsteps and have succumbed to the same meal choices. That means, I serve a lot of chicken. If you're not a vegetarian, I think that you will love the family recipe that appears below.
 

How to Make It 

 
Here's a tried and true recipe.

Ingredients:

Two chicken quarters, marinate them in your favorite salad dressing when you go to work. I prefer Ken's Light Caesar Dressing (This is Gluten Free and delicious).

Set your oven to 375 degrees.

Two cups of rice. I usually use Jasmine rice. However, the photo above has brown wild rice. That was a nice treat because it was a bit nutty and has more nutrients.

2 cups Chicken broth

Salt and Pepper (I prefer Lawry's Seasoned Salt or Goya's Sazon)

Season the chicken with the salt and pepper after marinating it. Put the rice in a casserole dish. Put the chicken on top. Pour the chicken broth on top of everything. Bake for 45 minutes (or until the chicken is cooked through--no pink meat.)
